1/4 cup white vinegar
2 tsp. extra-virgin olive oil
1/2 tsp. salt
6 garlic cloves, peeled
2 jalapeno peppers, stems removed
3 bay leaves
1 cup minced fresh parsley
1/4 cup minced fresh oregano

Place first ingredients in the blender, process until smooth. Add parsley and oregano and stir well. Store, covered in refrigerator for up to 2 days. Yield I cup(serving size about 21/2 tsp.

This serves not only as a salad but also as an appetizer. Quantities are approximate and can be varied as can the vegetables.
Small cauliflower 1
Broccoli, flower ends 3 cups (750ml)
Cherry tomatoes 2 cups (500ml)
Celery, cut in sticks 2 cups (500ml)
Carrots, cut in sticks 3
Mushrooms, fresh or canned 2 cups (500ml)
green pepper, cut strips or rings 1
Italian dressing 1 cup (250 ml)
Divide cauliflower into bite size pieces. Do the same with broccoli leaving some stem. Add tomatoes whole. Add celery and carrots. Add mushroom and green pepper. Place into container with tight fitting cover. Pour Italian dressing over all. Put cover on. Shake to distribute dressing. Chill overnight turning container occasionally. Drain, Serve 12.

According to chef James Schaeffer, the creator of this dressing, the key is to use a sharp knife to dice the shallots. A dull knife may runs the risk of bruising the shallots which is muddy the dressing.
1 tbsp. finely chopped shallots
2 tbsp. fresh lemon juice
1/2 cup canola oil
Kosher salt and white pepper
In small bowl combine shallots and lemon juice. Slowly whisk in oil until combined. Add salt and pepper to taste.

Boboli pizza crust are available in any deli, and you can usually find plain pizza crust there too. This easy pizza is delicious severed with deli fruit salad and cold milk.
Serves 4
Ingredients
2 cups marinated deli vegetables
1 (12-14-inch) Boboli pizza crust
1 (10ounces) container garlic and herb cram cheese
1 cup shredded provolone cheese
1/2 cup parmesan cheese
1. Preheat oven to 400 degree F. Chop the marinated vegetable into small pieces and place in saucepan with the marinate. Bring to a simmer over medium heat. Simmer for 3-4 minutes, until vegetable are tender. Drain thoroughly.
2. place pizza crust on a cookie sheet and spread with the cream cheese. Arrange vegetable on top and sprinkle with provolone and parmesan cheese. bake for 15-18inutes, until crust is hot and crisp and cheese is melted and begins to brown.
Make your own pizza crust
Make your own pizza crust by combining 2 cups flour, 1 cup cornmeal, 3 tablespoon oil, 1 (.75 ounce) package yeast and 11/2 cups water in a bowl. Knead thoroughly, let rise, punch down, divide in half and roll out.
prebake the crust at 400 degree F for 8-10 minutes, then cool, wrap well and freeze until ready for use.

1 can (19oz./540ml) chickpeas, drained, rinsed or 2 cups cooked chickpeas
1 can (19oz./540ml) black beans, drained and rinsed or 2 cups cooked black beans
1 can (14oz./398ml) artichoke hearts packed in water, drained, rinsed and diced
1 sweet red pepper, seeded and diced
2 cups chopped kale
15 kalamata olives, pitted and chopped
8 sun-dried tomatoes, diced
3/4 cup crumbled feta cheese
1/2 cup Balsamic Vinaigrette
In large bowl combine all ingredients.
Yield serves 6 to 8.

2 large leeks- just the white part- check for residue, then cut into cork tube-shape
salt and pepper
glass of white wine
3 tbsp water
50 g /2 oz. butter

1. Place the leek pieces in the shallow pan. Season with salt and pepper.
2. Pour into wine and pepper, then add the butter. Put on the lid and bring up to a simmer. Cook over the low heat for about 20 minutes p the leeks should be beautiful tender.

The fresher the bean, the riper the tomatoes, the better the course. Try this as a starter.

1 glove of garlic- thinly sliced
2 tbsp olive oil
250 g/ 1/2 lb. cherry tomatoes - cut in half
salt and pepper
500 g/ 1 lb. green bean
1. First make the sauce, Saute the garlic lightly in the oil
2. Add tomatoes and cook for 10 minutes until the sauce look unctuous but the tomatoes retain the bit of their shapes. Add salt and pepper to taste.
3. Bring a pan of water to boil and salt well. Add bean and cook until tender - bite them ti test them. Drain thoroughly and add to the sauce, turning them in it carefully.

Cornstarch, commonly used in a thickening agent gives the red wine vinaigrette body, so it can better coat a salad. Store any remaining vinaigrette in a sealed container in the refrigerator for up to I week
1 cup vegetable broth
2 tsp. cornstarch
2 tsp. red wine vinegar
1 tsp. extra-virgin olive oil
1 tsp. sugar
1 tsp. salt
1/8 tsp. freshly ground black pepper
Combine broth and cornstarch in a small saucepan, stirring with a whisk. Bring broth mixture to a boil over medium heat, cook 1 minute, stirring constantly. emove from heat and stir in remaining ingredients. Store, cover in refrigerator for up to1 week. Whisk before serving. Yield 1 cup. Serving size; 2 tsp.

Something to do with the stalks!
Stalks from 2 Kg or 2-1/2 bl Swiss chard - clean up and cut into bit size lengths
salt and pepper
2 tbsp Parmesan cheese - grated
olive oil

1. Heat oven over at 200 degree C /400 F/ Gas Mark 6
2. Soften the stalk with plenty of salt boiling water for 5 minutes. Drain thoroughly
3. In a small oiled gratin dish, arrange a layer of stalks and sprinkle with a tablespoon Parmesan over them, a little olive oil and season lightly. Repeat this until all the stalk all in the dish. Sprinkle over remaining cheese and a little more oil.
4. Cook in the uppermost part of the oven for 15 - 20 minutes.
5. Finish it off with a minutes under hot grill.

Tasty accompaniment to pretty much anything.
450 g/ 1 lb. courgettes
Salt and pepper
1 tbsp olive oil
1 tbsp chopped parsley
1 glove garlic - finely chopped
1. Top and tail courgettes. pell them and leaving stripes of green. Cut to Index finger thickness. Lightly salt them. Leave a good hour in a colander/sieve so they lose their liquid. Shake them well and dry with kitchen paper.
2. Heat the oik in large flying pan. Fly hte round over high heat so they color lightly. Turn over a pair of tongs or a spatula (depending on the amount of rounds, you may have to repeat this).
3. Grind over a lot of pepper. Throw them over parsley and garlic. Toss well. Turn down the heat to low, cover and cook for a few more minutes, being careful not to over cook them.

Our English neighbour Julie Ide, herself an accomplished cook, put onto Pao;a Gavin. This is based on recipe in her excellent Italian vegetarian and it's very tasty.
2 tbsp olive oil
1 small onion, chopped
1 green savoy cabbage - quartered, cored and shredded
2 tbsp hot water
1 tbsp capers - chopped if large
250 g/ 8 oz. tinned tomatoes - put through a sieve
1 tbsp balsamic vinegar
salt and pepper
1. heat the oil in a large sauce pan and sweat the onion gently until opaque.
2. Add the cabbage and the water, and cook, covered for 10 minutes, stirring from time to time.
3. Stir in the capers, tomatoes puree and the balsamic vinegar. Season well and cook covered, until the cabbages are tender - about 30 minutes.

The heat of chile isn't in seeds, it's in the white membranes ( the fruit's placenta) that hold the seeds to the chile. when cut, those membranes spray the chemical defense onto their seeds. for less heat, cut the top and bottom of the chile, then stand in upright on your cup board. Slice down between the chile and the membranes, removing the green fresh without cutting into the membranes.
1 tsp. chopped Serrano chile
1/4 tsp. salt
6 garlic groves, crushed
1 can anchovy fillet
3 tsp. red wine vinegar
2 tsp. water
2 tsp. fresh lemon juice
11/2 tsp. extra-virgin olive oil
Combine first 4 ingredients in a mortar, mash tom paste with a pestle. Combine chile paste mixture, vinegar and remaining ingredients in a small bowl, stirring with a whisk. Stored, cover in refrigerator for up to 1 week. Yield 3/4 cup. Serving size: 1 tsp.

What to do with Brussels sprouts? this tasty option and quickly done. I favor the small ones, they are sweeter.
15 g/ 1/2 oz. butter
1 tbsp olive oil
3 shallots - peeled and sliced
450 g/ 1 lb. Brussels sprouts outer leaves removed and halve
3 tbsp vegetable stock
salt and pepper
1. Melted the butter with the oil in medium frying pan and gently sweat the shallots until soft.
2. Add halved Brussels and turn with the shallots.
3. Cook for a couple minutes before adding stock. Turn again and season.
4. Cover and cook on a low heat until Brussels are tender but not mushy. You want to retain some of their lovely green color.

Takes just minutes to prepare this fruit, everyone enjoys
Lettuce cups 4 - 6
Orange sections, drained (or flesh) 10 Oz. 284 g
Banana sliced (see note) 2
Red grapes, halves. seeded 24
Whipping cream ( or 1 envelop topping) 1/4 cup, 50 mL
Salad dressing ( or mayonnaise) 1/4 cup 50 mL
Raisins 1/2 cup, 75 mL
Chopped walnuts or pecans (optional)
Put lettuce on 4 to 6 plated
Arrange orange section, bananas and grapes on lettuce
Whip cream in small bowl until stiff. Fold salad dressing into whipped cream. Spoon over top of fruit.
Sprinkle with raisins and also with walnuts if you are using them. Serve 4 - 6.
Note: Dip banana in orange juice to keep from darkening.

2 very ripe avocados 2
2 tbsp. freshly squeezed lemon juice 30mL
2 tsp. olive oil 10mL
1 tomato, seeded and diced 1
1 gloved garlic, minced 1
Pinch granulated sugar
Salt and freshly ground pepper
1. In food processor puree avocados until smooth. Or use a fork to smash avocado.
1. Stir in lemon juice, olive oil, tomato, garlic, sugar and salt and pepper to taste. Serve immediately as avocados have a tendency to blacken quickly. Serve 4.

Tips: this recipe can be lighter by replacing 1 tbsp. (15mL) olive oil with the same amount of water. It's just as tasty. For presentation, drizzle a little olive oil on top and sprinkle with fresh parsley.
Food processor
11/2 cup drained rinsed canned chickpeas (375mL)
1 clove garlic, coarsely chopped 1
3 tbsp. freshly squeezed lemon juice (45mL)
1 tbsp. olive oil (15mL)
1 tbsp. tahini (15mL)
1/2 tsp. salt (2mL)
Freshly ground pepper
In a food processor, puree chickpeas, garlic, lemon juice, olive oil, 3 tbsp. (45mL) water, tahini and pepper to taste, until smooth and creamy.
Variation: Fresh herb hummus: Add 2 tbsp. (30mL) fresh Italian flat-leaf parsley leaves, 6 fresh basil leaves and 2 tsp. (10mL) thyme leaves with chickpeas. Make 12.

Preheated oven to 350 degree F (180 degree C)
Baking sheet, lined with parchment paper.
12 pecan halves 12
12 1/2 inch (1cm) slice baguette 12
Dijon mustard
12 sliced Brie cheese 12
Pure maple syrup
1. In a dry skillet over medium heat, toast pecans, stirring constantly for about 5 minutes or until golden and fragrant. Remove from heat.
2. Place baguette slices on prepared baking sheet. Spread Dijon mustard to taste over 1 side of each slice. Top each slice with Brie and a toasted pecan.
3. Drizzle maple syrup over top. Bake in preheated oven for about 1 minutes or until cheese is melted. make 12.
variation: For a bolder flavor, replace the pecans with chopped hazelnuts and Brie with blue cheese, such as Cambozola.

Thus recipe makes plenty of dressing to keep on hand, so having a salad with dinner is effortless any night of the week. Because if the fresh herbs, the dressing only last for a couple of days.
9 tsp. white wine vinegar
11/2 tsp. honey
1/2 tsp. salt
1 cup canola oil
3 tsp. fresh chopped basil
3 tsp. minced fresh chive
Combine first 3 ingredients in a medium bowl, slowly add oil, stirring with a whisk and combined. Stir in basil and chives. Store, covered for up to 2 days.
Yield 1 cup. Serving size: 1 tsp.

This bold dressing is best with salads stocked with big flavors such as those found in sliced fruit, chopped nuts, diced bell peppers and broccoli florets.

1/2 cup fresh orange juice ( about 2 large oranges)
1/3 cups of vinegar
2 tsp. sesame seeds
1 tsp. Chinese hot mustard
1 tsp. sugar
1/4 tsp. salt
1 garlic clove, minced
2 tsp. canola oil
1 tsp. dark sesame seed oil
Combine first 7 ingredients in a medium bowl. Slowly drizzle oils into juice mixture, stirring constantly with a whisk. Store, cover for up to 10 days. Yield 1/2. Serving size: 4 tsp.

Drizzle this zesty dressing over mixed salad green topped with goat cheese. Squeeze the juice from juicy grapefruit or look for fresh grapefruit juice in a produce section of the grocery store.
1 tsp. olive oil
1/2 cup chopped shallots
2 cups fresh grapefruit juice (about 3 grapefruit)
2 tsp. chopped fresh cilantro
2 tsp. sugar
1/4 tsp. freshly ground black pepper
2 tsp. olive oil
Bloat 1 tsp. oil in large nonstick skillet over medium heat. Add shallots, cook for 5 minutes or until golden brown. Stir in juice. Bring to a boil over medium high heat, cook until reduced to 1 cup, about 6 minutes. Removed from heat cool to room temperature.
Place grapefruit mixture, cilantro, sugar and pepper in a food processor, process until smooth. With processor on, slowly pour 2 tsp. oil through food chute, process until smooth. Store, covered in refrigerator for up to 1 week. Yield 1 cup (Serving size: 1 tsp.)

1/3 cup honey
1/4 cup raspberry vinegar
1/4 cup plain fat free yogurt
1 tsp. Dijon mustard
2 tsp. olive oil
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
Combine all ingredients, stir with a whisker until creamy. Store, covered, in refrigerator for up to 1 week. Yield 3/4 cup. (Serving size: 3 tsp.)
